Pasta with Cajun Shrimp and Red Pepper
* 3/4 lb. jumbo Gulf shrimp, previously marinated, grilled* 1/2 lg. red pepper chopped* 1 med onion chopped* 2 med cloves garlic chopped* 3 Tbsp. butter* 2 Tbsp. olive oil* 1 Tbsp. Bay Spice* 1 Tbsp. Cajun spice* 3/4 cup half-and-half* 1 Tbsp. finely chopped parsley to garnish
- Marinate the shrimp in the spices and olive oil overnight
- Saute the shrimp in a hot cast iron skillet until done
- When cool, peel the shrimp, reserve shrimp, shells
- Boil the shells in enough water to cover half
- Cook approx. 30 minutes or until liquid reduced by half,
reserve
- Sautee onions, garlic pepper in butter until soft
- Add reserved liquid, cook over slow heat until reduced to 3/4
cup
- Add cream, stir well and cook for another 5 min stirring
well
- Cut shrimp into 1” pieces and add to sauce
- Stir slowly until mixture is warm, serve
