Recipes–Pasta With Broccoli, Sherry, And Dried Porcini Mushrooms

Broccoli is usually considered a stand-alone side dish vegetable; but with the right complementary ingredients, it can be used in many recipes. 



When a sauce is made of dried mushrooms, garlic, sherry, olive oil, and hot pepper flakes and the broccoli tossed in and served on pasta, the result is perfect and delicious.

Pasta with Broccoli, Sherry, and Dried Mushrooms

* 4-5 lg. bunches of broccoli
* 1/2 lb. spaghetti, penne, rigatoni, or other pasta 
* 3 Tbsp. (approx.)  olive oil
* 2-3 Tbsp. dried mushrooms (any variety), rehydrated
* 5 cloves garlic, chopped
* 1/4 – 1/2 cup Amontillado sherry (not too dry, sweet)
* 5 shakes hot pepper
- Steam the broccoli until done (tender, not overcooked)
- Cut off the stems and chop them into 1/2” pieces
- Cut broccoli florets (pieces) into quarters (more or less)
- Saute garlic, pepper flakes,mushrooms for approx. 10 min
- Add the chopped stems and the sherry
- Saute for 10 min. (approx.)
- Add the broccoli and stir well in sauce
- Serve
