Recipes–Baked BBQ Chicken Legs

This is a simple, delicious recipe; and a perfect way to cook chicken legs.  The trick is the marinating rub and the BBQ sauce for baking.

Stoneground yellow grits are nothing compared to ordinary grits.  They have high-flavor, taste very much like corn or corn muffins, and can’t be beat.  Palmetto Farms is a great brand.

Baked BBQ Chicken Legs with Yellow Grits

* 6 chicken legs

* 1 Tbsp. Cajun spice

* 1 Tbsp. chili powder

* 3-4 Tbsp. Hot BBQ sauce

* 1Tbsp. olive oil

* 1 cup stone-ground yellow corn grits (Palmetto excellent brand)

* 3 cups water

- Place the chicken legs in a baking dish, and coat well with olive oil

- Rub each piece with Cajun spice and chili powder

- Pour in the BBQ sauce and cover each piece thoroughly

- Let sit for about 6 hours, turning twice

- Preheat the oven to 350F

- Bake well-covered for 1 hr.

- Uncover, turn heat to 450F; bake for an additional 15 minutes (meat should fall off bone)

- While meat is finishing, cook grits (follow directions on package)

- Serve. The legs will render quite a bit of juice which should be poured over the grits.
