Recipes - Baked Fennel With Bay Spice

Whole fresh fennel root is a fragrant, high-flavor vegetable which can be served cooked or raw in salads.  I prefer cooked because the fennel becomes tender and the taste more even.  I added Bay Spice to the dish which gives it a spicy twist.  Bay Spice should not be used only for crabs!  It is a great addition to vegetable dishes as well.




Baked Fennel With Bay Spice
* 2 med. fennel bulbs, sliced and coarsely chopped
* 1 med. onion, chopped
* 3 sticks celery, chopped
* 1 cube vegetarian, low-salt bouillon dissolved in 1 cup water
* 1 lg. tbsp. unsalted European-style butter
* 1 tbsp. Bay Spice
* 10 grindings fresh pepper
- Preheat the oven to 400F
- Mix the vegetables well and place in a fireproof Pyrex baking dish
- Add the bouillon, butter, and pepper, and mix well
- Bake covered for approx. 45 min or until fennel is soft and juice is thick

- Serve
