Recipes–Sautéed Mushrooms, Basil, And Zucchini

The combined tastes of earthy mushrooms, sweet basil, and slightly bitter Italian zucchini are perfect. Italian zucchini are much more flavorful than the standard supermarket variety. They have pronounced ribs and have a quite distinctive taste.

Sautéed Mushrooms, Basil, and Zucchini

* 1 1/2 lb. fresh crimini mushrooms, quartered

* 4-5 pieces Italian zucchini, cut into 1” rondelles

Zucchini

* 1 Tbsp. dried basil

* 1 Tbsp. garlic flakes

* 2 Tbsp. olive oil

* 1/2 cup Amontillado sherry

- Sautee the mushrooms, zucchini, basil, and garlic in olive oil over high heat for 10 min.

- Stir frequently to mix thoroughly

- Add the sherry, reduce the  heat and continuing stirring occasionally for 15 min.

- The mixture is done when both the zucchini and mushrooms are tender, not soft

- Taste for salt; add ground pepper

- Serve
